These cacao classes are designed to deeply explore the origin of this fruit and journey to the center of its history, allowing us to discover the narrative that comes with a cup of chocolate. Drinking a cup of cacao is to open the essence of its knowledge; it is a sensory journey that helps us reach the core of its understanding and awaken the memory of its origin.
We will discuss the history of cacao and its people. Over these six classes, we will study fine aromatic cacao, cultivated in mixed plantations with traditional farming knowledge that has nurtured this fruit for generations. Additionally, we will have special guests who will talk to us about cacao in Mexico, its sound and vibrational qualities alongside a cup of cacao, and the music, the Biopharma Kakawa and the plants that we can use for a cacao ceremonial cup. These tools will help us enjoy a cup of cacao and share it ritually with those around us.
I am Diana Oviedo, a chocolatier. I completed my studies in Brazil on cacao plantations, where I learned how it is planted, harvested, fermented, and processed into fine chocolate. I work with cacao and its derivatives. One of my most rewarding projects was writing the book “Niños de Chocolate” with Penguin Random House.
My desire to learn more about cacao has led me to visit several cacao-producing communities, engage with their people, and see, feel, and experience every part of the post-harvest process of cacao. I came to understand that each cacao bean I grind carries a wealth of history and dreams. A cup of cacao carries the knowledge of the peoples who planted history, secrets that blossom into flavors that linger on the palates of those who savor its fruit. In its subtlety, it allows us to discover the surrounding trees in depth. Majestic ceiba trees provide shade for mandarin, orange, banana trees, and, of course, the great cacao tree that nestles in its bed to bear its fruit—the perfect gift that the gods placed on this earth to nourish the souls of the men and women who inhabit it.
